Crispy Sushi Rice
Rinse and cook rice
Place 1.5 cups short-grain sushi rice in a fine mesh strainer and rinse under cold water, stirring with your hand, until the water runs nearly clear (about 2–3 minutes). Drain for 10 minutes. Combine rinsed rice and 1.5 cups water in a medium saucepan, bring to a gentle boil over medium-high heat, then reduce to low, cover, and simmer 12–14 minutes until water is absorbed. Remove from heat and let rest, covered, 10 minutes.
Season rice
While rice rests, stir together 2 tbsp rice vinegar, 1 tbsp granulated sugar, and 1/2 tsp kosher salt until sugar dissolves. Transfer rice to a shallow bowl or wooden hangiri and gently fold in vinegar mixture with a cutting motion to avoid smashing grains. Fan or let cool to room temperature until slightly warm (about 15 minutes).
Form and chill rice cakes
Line a baking sheet with parchment. Lightly oil your hands. Shape the seasoned rice into 8 small rounds (about 2–2.5 inches diameter, 1/2 inch thick) or press into a lightly oiled round cookie cutter to get even shapes. Place on the prepared sheet and refrigerate 15–20 minutes to firm up — this helps them crisp uniformly.
Prepare flour slurry
Just before frying, whisk 2 tbsp all-purpose flour with 2 tbsp cold water until smooth to make a light slurry; this helps form a crisp exterior on the rice.
Pan-fry rice
Heat a large nonstick or cast-iron skillet over medium-high heat and add 3 tbsp neutral oil. When oil shimmers, lightly brush or dip each rice round into the flour slurry on both sides (shake off excess) and place in the skillet. Cook 3–4 minutes per side, pressing gently with a spatula, until deep golden-brown and crisp. Transfer to a wire rack or paper towel-lined plate to drain and keep warm.
Spicy Tuna Topping
Cut 8 oz sushi-grade ahi tuna into very small dice (or pulse briefly in a clean food processor for texture). Place in a bowl and gently combine with 2 tbsp mayonnaise, 1 tsp sriracha, 1/2 tsp sesame oil, 1 tsp tamari, 1/2 tsp chili oil (if using), 1 tbsp thinly sliced scallion, and 1/2 tsp toasted sesame seeds. Taste and adjust heat or salt — keep chilled until assembly.
Assembly & Garnish
When rice rounds are crisp and still warm, arrange them on a serving platter.
Place 2–3 thin avocado slices on each rice round (or fan a small amount). Spoon about 1 heaping tablespoon of the spicy tuna mixture on top of the avocado, pressing gently so it holds its shape.
Optionally garnish with thin nori strips or a small smear of extra mayonnaise mixed with sriracha for visual appeal.
Serve immediately with soy sauce or ponzu for dipping, lime wedges on the side, and pickled ginger as a palate cleanser.
