Cooking the Potatoes

Prepare the Potatoes

Wash and dice the Yukon Gold potatoes into small cubes.

Fry the Potatoes

In a large skillet, heat the duck fat over medium heat. Add the diced potatoes and season with salt and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden brown and crispy.

In a separate skillet, cook the local smoked back bacon over medium heat until crispy, about 3-4 minutes per side.
