Cook the Bacon

In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and drain on paper towels.

Fry the Potatoes

In the same skillet, add duck fat and heat over medium-high. Add diced potatoes and fry until golden brown and crispy, about 10-12 minutes. Season with salt and pepper.

Scramble the Eggs

In a bowl, whisk the eggs. Pour into the skillet and scramble until just set. Remove from heat.

Make the Salsa

In a bowl, combine diced tomato, red onion, cilantro, lime juice, salt, and pepper. Mix well.

Assemble the Wrap

Lay a tortilla flat, layer with scrambled eggs, fried potatoes, bacon, aged cheddar cheese, and a generous spoonful of fresh salsa. Roll up tightly.

Grill the Wrap

In the skillet or a grill pan, place the wrap seam-side down and grill for 2-3 minutes on each side until golden and the cheese is melted.
