Cook the risotto rice according to package instructions until al dente. Allow to cool slightly.

Mix Ingredients

In a large bowl, combine cooled risotto, smoked salmon, cream, parmesan, herbs, beaten egg, flour, salt, and pepper. Mix until well combined.

Using your hands, form the mixture into small patties or fritters.

In a frying pan, heat olive oil over medium heat. Fry the fritters for about 3-4 minutes on each side, or until golden brown. Drain on paper towels.
