Chill glass

Place a coupe or martini glass in the freezer for at least 5 minutes or fill it with ice water while preparing the drink to thoroughly chill.

Mix base

In a mixing glass filled with ice (about 1 cup), pour 2 oz gin and 0.5 oz dry vermouth. Add 2 dashes of orange bitters. Stir gently for 20–30 seconds until the mixture is well chilled and slightly diluted (stir with a bar spoon, using smooth, even strokes).

Strain

Dump the ice or remove the chilled glass from the freezer. Using a Hawthorne or julep strainer, double-strain the mixed gin and vermouth into the chilled coupe or martini glass to remove small ice shards.

Top with sparkling wine

Carefully top the strained cocktail with 2 oz cold Champagne or other dry sparkling wine. Pour slowly along the side of the glass to preserve effervescence and avoid overflow.

Garnish & serve

Express a lemon twist over the drink to release oils, then run the twist around the rim and drop it into the glass (or hang on the edge). Serve immediately while fizzy and cold.
