Main Cocktail

Method

Main Cocktail

1

Build and chill

Fill a mixing glass with ice to chill. Add rye whiskey, sweet vermouth, Campari, fresh lemon juice, maple syrup, and Angostura bitters to the chilled mixing glass.

2

Stir

Using a bar spoon, stir the mixture briskly but smoothly for 20–30 seconds (about 20–30 full rotations), until the outside of the mixing glass feels well chilled and the liquid is properly diluted and slightly viscous.

3

Strain

Place a large chilled rocks glass or coupe on the bar. Double-strain the cocktail over one large clear ice cube or fresh ice in the glass using a Hawthorne and fine mesh strainer (or a julep strainer) to remove small ice shards and any pulp.

Garnish & Finish

4

Express and twist

Hold the orange peel about 3–4 inches above the drink, skin side down, and give it a firm squeeze to express the oils over the surface. Run the peel around the rim briefly, then drop it into the glass.

5

Final touch

Skewer the luxardo cherry (or brandied cherry) on a cocktail pick and rest it on the rim or lay it into the drink. Serve immediately.
