Tomato Basil Soup

Tomato Basil Soup

    Sauté Shallots and Garlic

    In a large pot, heat the olive oil over medium heat. Add the chopped shallots and cook until they are soft and translucent, about 5 minutes. Add the minced garlic and sauté for another minute until fragrant.

    Add Tomatoes and Broth

    Pour in the canned whole tomatoes (with juices) and vegetable broth. Stir well to combine and bring the mixture to a simmer.

    Blend the Soup

    Once the soup is simmering, use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return to the pot.

    Add Basil and Season

    Stir in the chopped basil, salt, and black pepper. Simmer for an additional 10 minutes to allow the flavors to meld. If desired, stir in the heavy cream for a richer flavor.

Biscuit

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

    Cut in Butter

    Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

    Add Milk

    Pour in the milk and mix gently until just combined. Do not overwork the dough.

    Shape and Bake

    Turn the dough onto a floured surface and gently pat it into a 1-inch thick round. Cut out biscuits using a biscuit cutter or a glass. Place them on a baking sheet and bake for 12-15 minutes, or until golden brown.

Farro Salad

    Cook Farro

    In a medium saucepan, combine 1 cup of farro with 3 cups of water. Bring to a boil, reduce heat to low, cover, and simmer for 25-30 minutes until tender. Drain and let cool.

    Prepare Salad Ingredients

    In a large bowl, combine the halved cherry tomatoes, diced cucumber, diced red onion, and chopped parsley.

    Combine Salad with Farro

    Once the farro has cooled, add it to the bowl with the salad ingredients. Drizzle with roasted shallot vinaigrette and toss gently to combine.
