Burger Directions
Prepare the Patties
In a large bowl, combine the ground angus brisket with salt and black pepper. Mix gently until just combined. Divide the mixture into two equal portions and shape each into a patty about 1/2 inch thick.
Cook the Patties
Preheat a skillet or grill over medium-high heat. Cook the patties for about 3-4 minutes on one side until a crust forms. Flip the patties, place a slice of American cheese on each, and cook for an additional 3-4 minutes until the cheese is melted and the internal temperature reaches 160°F (71°C).
Caramelize the Onions
Thinly slice the medium onion. In a separate skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook, stirring occasionally, until they are golden brown and caramelized, about 10-15 minutes.
Assemble the Burgers
Toast the potato buns lightly on the grill or skillet. Spread 2 tablespoons of garlic aioli on the bottom half of each bun. Place the cooked patty with melted cheese on top, followed by caramelized onions, biryani pickles, and a drizzle of OC curry ketchup. Top with the other half of the bun.

Prepare the Potatoes
Wash and peel the potatoes. Cut them into thin strips to resemble fries.
Season the Fries
In a large bowl, toss the potato strips with olive oil, peri peri spice mix, and salt until evenly coated.
Bake the Fries
Preheat the oven to 425°F (220°C). Spread the seasoned fries in a single layer on a baking sheet. Bake for 25-30 minutes, flipping halfway through, until they are crispy and golden brown.
