Prepare the Rice

Cook the Jasmine Rice
Rinse the Jasmine rice under cold water until the water runs clear. In a medium pot, combine 2 cups of rice with 3 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15-18 minutes. Once cooked, remove from heat and let it sit covered for another 5 minutes. Fluff with a fork and set aside.
Cook the Shrimp

Sauté the Shrimp
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and season with salt and black pepper. Cook until the shrimp turn pink and opaque, about 3-4 minutes. Remove from the skillet and set aside.
Fry the Rice

Sauté the Vegetables
In the same skillet, add the remaining sesame oil. Add the minced garlic and diced carrot, sautéing for about 2 minutes until fragrant. Stir in the frozen peas and chopped green onions, cooking for an additional 2-3 minutes.

Add Rice and Sauce
Add the cooked rice and soy sauce to the skillet. Stir well to combine all ingredients, cooking for another 3-4 minutes until heated through.

Return the Shrimp
Finally, return the sautéed shrimp to the skillet, mixing gently until everything is evenly combined and heated.
Serve the Dish

Top and Serve
Transfer the fried rice to serving plates. Drizzle with smoked fish aioli, sprinkle bonito flakes on top, and add slices of pickled Asian pears. Serve immediately and enjoy!
