Sorbet Preparation

Prepare the Fruit

Wash and chop the fresh seasonal fruit into small pieces. If using strawberries, remove the stems.

Blend the Base

In a blender, combine the chopped fruit, granulated sugar, lemon juice, water, and a pinch of salt. Blend until smooth.

Chill the Mixture

Pour the blended mixture into a shallow dish and place it in the freezer. Allow it to chill for about 1 hour.

Stir and Freeze

After 1 hour, remove the mixture from the freezer and stir it well. Return it to the freezer and repeat this process every 30 minutes until the sorbet is firm and fluffy, which should take about 3 hours.

Toast the Spices

In a dry skillet over medium heat, toast the coriander and cumin seeds until fragrant, about 2-3 minutes. Stir frequently to prevent burning.

Blend the Dukkah

In a food processor, combine the toasted coriander and cumin seeds, pistachios, sesame seeds, salt, and black pepper. Pulse until the mixture is coarsely ground but not a fine powder.

Store the Dukkah

Transfer the dukkah to an airtight container and store it in a cool, dark place until ready to use.
