Grilling the Salad

    Prepare the Lettuce

    Wash and dry the Romaine lettuce. Cut each head in half lengthwise.

    Grill the Lettuce

    Preheat your grill to medium-high heat. Brush the cut sides of the lettuce with olive oil and sprinkle with salt and black pepper.

    Grill

    Place the lettuce halves cut side down on the grill. Grill for about 2-3 minutes until the lettuce is slightly charred and wilted. Remove from the grill and set aside.

Making the Caesar Dressing

    Prepare the Dressing Ingredients

    In a bowl, mash the anchovy fillets with minced garlic to form a paste.

    Combine Ingredients

    Add the egg yolk, Dijon mustard, lemon juice, Worcestershire sauce, salt, and black pepper to the anchovy paste. Whisk until well combined.

    Add Olive Oil

    While continuously whisking, slowly drizzle in the olive oil until the dressing is thick and emulsified. Adjust seasoning with salt and pepper to taste.

Assembling the Salad

    In a large bowl, combine the grilled lettuce, shredded Parmesan cheese, and croutons.

    Drizzle the Caesar dressing over the salad and toss gently to coat all the ingredients.
