Method

Fried Chicken

  1. 1

    Marinate the Chicken

In a large bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken thighs and ensure they are well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.

  2. 2

    Prepare for Frying

In a shallow dish, add the flour. Remove the chicken from the buttermilk marinade, allowing excess to drip off, and dredge each piece in flour until fully coated.

  3. 3

    Fry the Chicken

In a large skillet, heat vegetable oil over medium-high heat until hot. Fry the chicken in batches, cooking each piece for about 7-8 minutes on each side or until golden brown and cooked through. Remove and place on paper towels to drain excess oil.

Biscuit Dough

  1. 4

    Prepare the Biscuit Dough

In a large bowl, whisk together the flour, baking powder, baking soda, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Pour in the buttermilk and stir until just combined.

  2. 5

    Shape the Biscuits

Turn the dough onto a floured surface and gently knead a few times until it comes together. Pat it into a 1-inch thick rectangle. Cut out biscuits using a round cutter and place on a baking sheet.

  3. 6

    Bake the Biscuits

Preheat the oven to 425°F (220°C). Bake the biscuits for 12-15 minutes or until golden brown.

Mashed Potatoes and Gravy

  1. 7

    Prepare the Potatoes

Peel and chop the russet potatoes into chunks. Boil in salted water until fork-tender, about 15-20 minutes. Drain and return to the pot.

  2. 8

    Mash the Potatoes

Add butter, milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy. Set aside.

  3. 9

    Make the Gravy

In a saucepan, mix the gravy mix with water according to package instructions. Heat over medium heat until thickened. Serve over the mashed potatoes.

Braised Greens

  1. 10

    Prepare the Greens

Wash and chop the collard greens. In a pot, heat olive oil over medium heat. Add chopped onion and garlic, sautéing until softened.

  2. 11

    Cook the Greens

Add the collard greens and chicken broth to the pot. Season with salt and black pepper. Cover and cook for about 30 minutes until the greens are tender.

Mac and Cheese

  1. 12

    Cook the Macaroni

In a large pot, boil water and cook elbow macaroni according to package instructions until al dente. Drain and set aside.

  2. 13

    Make the Cheese Sauce

In the same pot, melt butter over medium heat. Stir in flour and cook for 1 minute. Gradually whisk in milk, cooking until thickened. Stir in cheddar cheese until melted and smooth.

  3. 14

    Combine and Serve

Add the cooked macaroni to the cheese sauce, mixing until well coated. Season with salt and pepper. Serve hot.
