Fried Chicken

Marinate the Chicken
In a large bowl, combine the buttermilk, garlic powder, onion powder, paprika, and salt. Add the chicken pieces, ensuring they are well-coated. Cover and refrigerate for at least 2 hours or overnight for best results.

Prepare for Frying
In a large bowl, mix the flour, black pepper, and additional salt. Remove the chicken from the marinade, letting excess buttermilk drip off, then dredge each piece in the flour mixture, shaking off the excess.

Heat the Oil
In a large heavy-bottomed pot, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, cooking in batches if necessary. Fry for about 12-15 minutes, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F/74°C).

Drain and Serve
Once cooked, transfer the chicken to a wire rack or plate lined with paper towels to drain excess oil. Serve hot.

Preheat your oven to 450°F (230°C).

In a large bowl, whisk together the flour, baking powder, and salt.

Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until it resembles coarse crumbs.

Pour in the milk and stir until just combined. Do not overmix.

Turn the dough onto a floured surface, pat it down to about 1-inch thick, and cut out biscuits using a biscuit cutter. Place on a baking sheet and bake for 12-15 minutes or until golden.

Prepare Gravy
In a saucepan, combine chicken broth with flour over medium heat, whisking until smooth. Bring to a simmer and cook until thickened. Season with salt and pepper to taste.

Serve the mashed potatoes topped with the gravy.
