Braised Beef

    Sear the Beef

    In a large pot, heat 2 tablespoons of olive oil over medium-high heat. Season the beef chuck roast with salt and black pepper. Sear the beef on all sides until browned, about 5-7 minutes.

    Sauté Vegetables

    Remove the beef from the pot and set aside. In the same pot, add the chopped onion and minced garlic. Sauté until the onion is translucent, about 3-4 minutes.

    Braise the Beef

    Return the beef to the pot and add beef broth, cumin, and bay leaves. Bring to a simmer, cover the pot, and reduce heat to low. Let it braise for 2-3 hours until the beef is tender and pulls apart easily.

    Shred the Beef

    Once cooked, remove the beef from the pot and shred it with two forks. Return the shredded beef to the pot to soak up some of the juices.

Poblano Crema

    Blend Ingredients

    In a blender, combine the roasted poblano pepper, sour cream, lime juice, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Sesame Chimichurri

    Mix Chimichurri

    In a bowl, combine the chopped parsley, chopped cilantro, minced garlic, red wine vinegar, olive oil, toasted sesame seeds, and salt. Mix well to combine. Let sit for at least 15 minutes for the flavors to meld.

Tostadas

    Prepare Tostadas

    Preheat the oven to 375°F (190°C). Arrange corn tortillas on a baking sheet and bake for 10-12 minutes until crispy. Remove from the oven and cool slightly.

    Assemble Tostadas

    Top each crispy tortilla with a generous portion of shredded braised beef, drizzle with poblano crema, sprinkle with chopped hazelnuts, and finish with crumbled smoked feta cheese. Drizzle with sesame chimichurri before serving.
