Preparing the Burnt Ends
Prepare the Brisket
Trim excess fat from the beef brisket and cut it into 1-inch cubes.
Make the Rub
In a bowl, combine brown sugar, paprika, garlic powder, onion powder, salt, and black pepper. Crush the black cardamom pods and add them to the mixture.
Season the Brisket
Rub the spice mixture evenly over the brisket cubes.
Caramelize the Burnt Ends
After 6 hours, remove the brisket, toss it in a bit of the remaining rub, and place it back in the smoker for another 2 hours to caramelize.

Preparing the Pickled Fennel Salad
Prepare the Pickling Liquid
In a small saucepan, combine apple cider vinegar, water, sugar, and salt. Heat until the sugar and salt dissolve.
Pickle the Fennel
Thinly slice the fennel bulb and place it in a jar. Pour the warm pickling liquid over the fennel and let it sit for at least 30 minutes.
Make the Salad
In a bowl, combine the pickled fennel, fresh parsley, and drizzle with olive oil before serving.
