Cook the Arborio Rice
In a medium pot, bring the vegetable broth to a boil. Add the Arborio rice, reduce heat to low, cover, and simmer for about 20 minutes until the rice is tender and the liquid is absorbed. Remove from heat and let it cool slightly.

Mix the Ingredients
In a large mixing bowl, combine the cooked rice, pumpkin purée, grated Parmesan cheese, salt, and black pepper. Mix well until all ingredients are incorporated.

Form the Balls
Take small portions of the mixture and form them into balls, about the size of a golf ball. Place them on a tray and refrigerate for at least 30 minutes to firm up.

Fry the Arancini
In a deep skillet or frying pan, heat the oil over medium-high heat. Fry the arancini in batches until golden brown and crispy, about 3-4 minutes per side. Remove and drain on paper towels.

Add the Butternut Squash
Add the diced butternut squash to the pot and stir to combine. Cook for about 5 minutes, allowing the squash to soften slightly.

Incorporate Coconut Milk and Spices
Pour in the coconut milk and add the curry powder and salt. Stir well, bringing the mixture to a simmer. Cover and let it cook for about 15-20 minutes, until the squash is tender.

Finish the Curry
Remove from heat and stir in the chopped cilantro, mint, and lime juice. Adjust seasoning if necessary.

Fry the Shallots
In a small saucepan, heat the oil over medium heat. Add the thinly sliced shallots and fry until golden brown and crispy, about 5-7 minutes. Drain on paper towels and set aside.
