Prepare the Ribs

Start by trimming excess fat from the beef ribs, if necessary. Pat them dry with paper towels.

Season the Ribs

In a small bowl, mix the kosher salt, black pepper, garlic powder, and onion powder. Rub this seasoning mix generously all over the beef ribs.

Preheat the Wood Fire Grill

Prepare your wood fire grill by getting it hot and maintaining a temperature of around 225°F (107°C).

Cook the Ribs

Place the seasoned beef ribs on the grill bone side down. Cook for approximately 4-5 hours, or until the ribs are tender, basting with the mole espresso BBQ sauce every hour.

Combine Ingredients

In a saucepan, combine the tomato sauce, espresso coffee, brown sugar, smoked paprika, cayenne pepper, cumin, lime juice, salt, and black pepper.

Simmer the Sauce

Bring the mixture to a low simmer over medium heat, stirring occasionally for about 15 minutes until the sauce thickens slightly.

Finish the Sauce

Remove from heat and let the sauce cool slightly. Blend if desired to create a smoother texture.

Prepare the Potatoes

Wash and peel the large potatoes. Cut them into thin shoestring fries.

Heat the Oil

In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes

Carefully add the shoestring fries to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch.

Season the Fries

Remove the fries from the oil and drain on paper towels. While still hot, sprinkle with salt, lime zest, and lime juice.
