Prepare the Pineapple

Cut the pineapple into quarters, leaving the skin on. Remove the core and any brown spots.

Mix the Ingredients

In a large bowl or fermentation container, combine the pineapple pieces, brown sugar, cinnamon stick, cloves, and salt.

Add Water

Pour the 4 cups of water over the pineapple mixture, ensuring that the sugar is dissolved as you stir.

Incorporate Yeast

Sprinkle the active dry yeast over the top of the mixture. Allow it to sit for about 5 minutes without stirring.

Fermentation Process

Cover the container with a cloth or plastic wrap, securing it with a rubber band. Let the mixture ferment at room temperature for 3 to 5 days, stirring once daily.

Add Lime Juice

After fermentation, strain the liquid into a clean bottle or jar, discarding the solids. Stir in the lime juice for added flavor.

Chill and Serve

Refrigerate the tepache for at least 2 hours before serving. Serve chilled over ice, garnished with a slice of lime if desired.
