Prepare the grill
Soak the mesquite wood chips in water for at least 30 minutes. Preheat your grill to medium-high heat.

Prepare the patties
In a mixing bowl, combine the ground beef, salt, black pepper, garlic powder, and onion powder. Mix gently until just combined, then form into 4 equal patties.

Flip and add cheese
Flip the patties and place a slice of cheddar cheese on each one. Grill for an additional 4-5 minutes or until the cheese is melted and the patties are cooked to your desired doneness.

Toast the buns
During the last minute of grilling, place the hamburger buns cut side down on the grill to toast lightly.

Assemble the burgers
Spread dijonnaise on the bottom half of each toasted bun. Place a grilled patty with melted cheese on top, followed by lettuce, tomato slices, onion slices, and pickles. Top with the other half of the bun.

Serve
Serve the mesquite grilled hamburgers immediately with a side of French fries.
