Preparing the Chicken Wings

Marinate the Chicken
In a large bowl, combine the chicken wings, jerk seasoning, and olive oil. Toss until the wings are evenly coated. Cover and refrigerate for at least 1 hour or overnight for best results.

Preheat the Grill
Preheat your grill to medium-high heat (about 375°F or 190°C).

Grill the Chicken Wings
Place the marinated chicken wings on the grill. Cook for about 20-25 minutes, turning occasionally, until the wings are crispy and have an internal temperature of 165°F (74°C). Remove from the grill and set aside.
Preparing the Jerk Potatoes

Boil the Potatoes
In a pot, cover the baby potatoes with water and bring to a boil. Cook for about 10-12 minutes until tender. Drain and let cool slightly.

In a mixing bowl, combine the boiled potatoes, jerk seasoning, olive oil, and salt. Toss to coat the potatoes evenly.

Mix the Sauce
In a small bowl, combine the aji amarillo paste, sour cream, and lime juice. Stir until smooth and well combined. Adjust seasoning to taste.

On a serving platter, arrange the grilled chicken wings and jerk potatoes. Drizzle with aji amarillo sauce and sprinkle with red onion, cilantro, and chopped peanuts. Serve with lime wedges on the side.
