In another bowl, whisk together the flour, cornstarch, paprika, garlic powder, onion powder, black pepper, cayenne pepper, and remaining salt. Set aside.
In a large, deep skillet or fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).
Remove the chicken pieces from the buttermilk marinade, allowing excess to drip off. Dredge each piece in the flour mixture, ensuring an even coating.
Carefully place the coated chicken pieces in the hot oil, frying in batches to avoid overcrowding. Fry for 12-15 minutes, or until golden brown and cooked through. Use a meat thermometer to ensure internal temperature reaches 165°F (75°C).
Once the chicken is cooked, remove it from the oil and place it on a paper towel-lined plate to drain excess oil. While still warm, drizzle the honey over the fried chicken pieces before serving.
