    Make egg mixture

    Crack the 6 large eggs into a bowl and beat lightly until just combined. Stir in dashi (60 ml), mirin (2 tbs), sugar (1 tsp), light soy sauce (1 tsp) and salt (1 tsp) until sugar dissolves. Strain the mixture through a fine-mesh sieve into a clean bowl to remove chalazae and ensure a smooth custard-like liquid.

    Cook layers

    Heat a 20 x 18 cm rectangular tamagoyaki pan or a small nonstick skillet over medium-low heat. Brush a thin layer of neutral oil (about 1 tsp) to coat. Pour a thin layer (about 1/4 cup / 60 ml) of the egg mixture into the pan, tilting to cover the surface. Cook until the egg is mostly set but still slightly glossy on top (about 30–45 seconds). Using chopsticks or a spatula, roll the set egg layer away from you to the far side of the pan into a log. Brush pan again with oil, then pour another thin layer so the new egg flows underneath the rolled egg. When set, roll the log back toward you, wrapping the new layer around it. Repeat until all egg mixture is used, making 4–5 thin layers and a compact roll. Total cooking time for the egg roll should be about 6–8 minutes. Keep heat low enough to avoid browning.

    Shape & rest

    Once the roll is finished, remove from pan and, while still warm, gently press with a bamboo mat (makisu) or a piece of parchment to shape into an even rectangular roll. Let rest 5 minutes on a board to firm and cool slightly before slicing.

Filling (Vegetable with Pork)

    Prepare vegetables

    Prepare carrot, green onion, napa cabbage and shiitake as described. Squeeze any excess moisture out of the shredded napa cabbage using a kitchen towel or paper towels; this prevents a watery filling.

    Cook pork and vegetables

    Heat 1 tbs neutral oil in a skillet over medium-high heat. Add minced garlic (1 clove) and grated ginger (1 tsp); sauté 15–20 seconds until fragrant. Add ground pork (200 g) and break up with a spatula. Cook until pork loses pink (about 3–4 minutes). Add sliced shiitake, carrot, and napa cabbage; stir-fry 2–3 minutes until vegetables soften.

    Season & bind

    Reduce heat to medium. Add soy sauce (1 tbs), sake (1 tbs), sesame oil (1 tsp), sugar (1 tsp), salt (1 tsp), and black pepper (1/4 tsp). Stir to combine. Sprinkle cornstarch (1 tsp) over the mixture and stir; this will slightly thicken juices and help the filling hold together. Cook another 1–2 minutes until liquid reduces. Stir in sliced green onion (2). Taste and adjust seasoning; let filling cool slightly before assembly.

Assembly & Finish

    Slice egg and assemble rolls

    When the tamagoyaki is warm but not hot, trim uneven ends and slice the roll horizontally in half to create two long pieces (optional), then place a thin, even line of the cooled pork-vegetable filling along the center of each egg strip. Roll the egg around the filling tightly to enclose it, seam side down. Alternatively, slice the whole tamagoyaki into 1–1.5 cm pieces and top each piece with a small spoonful of filling for a bite-sized presentation.

    Garnish & serve

    Arrange rolls on a platter. Serve with a small dish of soy sauce or dipping sauce (60 ml) and sprinkle toasted sesame seeds (1 tsp) and fresh cilantro or mitsuba if using. Serve warm or at room temperature.

    Notes

    All components are portioned for 2–3 servings. You can make the filling ahead and reheat briefly before assembly. If you don’t have a rectangular pan, a small round nonstick skillet works; roll in the same multilayer technique.
