Cook edamame
Bring a medium saucepan of water to a rolling boil with 1/2 tsp of salt. Add the frozen edamame (pods or shelled) and cook until heated through and bright green, 3–5 minutes for shelled, 4–6 minutes for in-pod. Taste one to confirm doneness.

Drain the edamame in a colander and immediately rinse briefly under cold water or plunge into an ice bath to stop cooking and preserve color. Drain well and pat dry with a clean kitchen towel or paper towels.
Spicy Sauce

Make sauce
While the edamame cooks, whisk together 1 tbsp neutral oil, 1/2 tsp toasted sesame oil, 1 tbsp soy sauce, 1 tsp rice vinegar, 1 tbsp gochujang (or 1 tbsp sambal oelek), 1/2 tbsp honey, 1/2 tsp grated ginger, 1 minced garlic clove, and 1/2 tsp red pepper flakes in a small bowl until smooth. Adjust sweetness or heat to taste — add more honey to reduce heat or more gochujang for extra spice.

Toss and garnish
Transfer the drained edamame to a mixing bowl. Pour the spicy sauce over the edamame and toss well to coat evenly. Zest half a lime over the edamame and squeeze the lime juice (about 1/2 lime) into the bowl. Toss again.

Transfer to a serving bowl and sprinkle with 1 tsp toasted sesame seeds, 1 tbsp chopped scallion, and an extra pinch of flaky salt if desired. Serve warm or at room temperature as an appetizer or snack.
