    In a small mixing bowl, add 3 tablespoons Japanese mayonnaise and 2 tablespoons plain Greek yogurt. Whisk them together until smooth and slightly airy.

    Add wasabi and seasoning

    Stir in 2 teaspoons prepared wasabi paste, 1 teaspoon soy sauce, 1 teaspoon fresh lemon juice, and 1 teaspoon honey or mirin. Mix thoroughly until the wasabi is evenly distributed and the mixture is homogeneous.

    Adjust flavor and texture

    Whisk in 1 teaspoon sesame oil for nuttiness, then add up to 1 teaspoon water if the sauce is too thick for dipping. Season with 1 teaspoon salt and 1/4 teaspoon black pepper; taste and adjust—add more wasabi if you want more heat (start in 1/2 teaspoon increments).

    Cover the bowl and refrigerate the sauce for at least 15 minutes (up to 1 hour) to allow flavors to meld and the wasabi to bloom. Stir again before serving.
