    Whisk together soy sauce (0.5 cup), rice vinegar (2 tbs), sesame oil (1 tsp) and 2 tablespoons water in a small bowl or measuring cup until homogenous.

    Add granulated sugar (1 tbs) and honey (1 tsp) to the sauce base and whisk until the sugar mostly dissolves. Taste and adjust: add another 1 teaspoon sugar or a splash more rice vinegar if you want it sweeter or tangier.

    Stir in the grated fresh ginger (1 tsp), minced garlic (1 tsp), red pepper flakes (1/2 tsp) and sliced scallions (2 tbsp). Mix thoroughly so aromatics distribute evenly through the sauce.

    Thicken and finish

    Make a cornstarch slurry by whisking 1 teaspoon cornstarch into 1 tablespoon cold water until smooth. Warm the sauce gently in a small saucepan over medium-low heat until it just begins to steam (about 1–2 minutes). While whisking, pour in the slurry and continue to cook 30–60 seconds until the sauce lightly thickens and glazes the back of a spoon. Remove from heat and stir in 1 teaspoon toasted sesame seeds. Let cool slightly before serving; the sauce will thicken a bit more as it cools.
