Method

Prepare Glass

Chill a coupe or martini glass in the freezer for a few minutes or fill with ice water while you prepare the cocktail.

If you want a sugared rim: rub a lemon wedge around the glass rim, then dip the rim into a shallow plate of superfine sugar to coat. Discard ice water from the glass if used and set the glass aside.

Add Ingredients

In a cocktail shaker, pour 2 oz Hennessy VS, 1 oz Cointreau, 0.75 oz fresh lemon juice, and 0.25 oz simple syrup (if using). If using egg white for a silkier texture, add 0.5 egg white now.

Dry Shake (if using egg white)

If you added egg white, close the shaker and shake vigorously without ice for about 10–15 seconds to emulsify and build foam.

Wet Shake

Add plenty of ice to the shaker (about 1 cup cubed). Close and shake vigorously for 10–15 seconds until well chilled and the shaker is frosty.

Double strain the cocktail into the chilled, sugared (or plain) coupe using a Hawthorne strainer and a fine mesh strainer to catch ice shards and any bits of foam or pulp.

Garnish & Serve

Express the oils of a lemon or orange twist over the drink by holding the twist over the surface and giving it a quick squeeze. Rim the glass with the twist and drop it into the drink or rest it on the rim.
