    Prepare glass

    Chill a coupe or Nick & Nora glass by placing it in the freezer for a few minutes or filling it with ice water while you prepare the cocktail.

    Combine ingredients

    In a cocktail shaker, add 2 oz añejo rum, 0.5 oz fino sherry, 0.5 oz cognac, 0.5 oz fresh lime juice, 0.5 oz demerara simple syrup, 2 dashes orange bitters, and 1 dash Angostura bitters.

    Dry shake (optional)

    If you prefer a slightly rounder texture, give the sealed shaker a 5–7 second dry shake (no ice). This helps integrate the sherry and citrus.

    Shake with ice

    Add a good handful of ice to the shaker (about 1 cup). Shake vigorously for 10–15 seconds until the outside of the shaker is very cold and well chilled.

    Fine-strain

    Discard the ice/water from the chilled serving glass. Using a Hawthorne strainer and a fine-mesh (tea) strainer, double-strain the cocktail into the chilled coupe to remove small ice shards and any pulp.

    Finish

    Express the oils from the orange peel over the surface of the drink by holding the peel skin-side down about 3–4 inches above the cocktail and giving it a firm squeeze. Run the peel around the rim of the glass, then drop it into the drink. Optionally, garnish with one Luxardo cherry on a pick.

    Serve

    Serve immediately. The SANDEMAN Armada is balanced between the oak and caramel notes of the añejo rum and cognac, the saline/dry lift of the fino sherry, and bright citrus with bitters to tie it together.
