Base — dairy ice cream

    Make the infused milk

    Combine whole milk, heavy cream, 2 tbs sugar, and salt in a medium saucepan. Split the vanilla bean and scrape seeds into the milk (or add vanilla extract). Warm over medium heat until just steaming and edges show small bubbles, about 5–7 minutes. Do not boil.

    Prepare egg custard (optional step for richer texture)

    If using the egg yolk option, whisk the 4 yolks with 1 tbs sugar in a bowl until pale and slightly thickened. Temper the yolks by slowly pouring 1/3 of the hot milk mixture into the yolks while whisking continuously. Return tempered yolk mixture to the saucepan and cook over low heat, stirring constantly with a wooden spoon or heatproof spatula, until the custard coats the back of the spoon (170–175°F / 77–80°C). Remove from heat.

    Chill the base

    If you made custard, strain the mixture through a fine-mesh sieve into a clean bowl to remove any cooked egg bits and the vanilla pod. For the no-egg option, simply cool the infused milk. Place plastic wrap directly on the surface of the mixture to prevent a skin. Chill in the refrigerator until thoroughly cold, at least 4 hours or overnight.

    Churn the ice cream

    Once chilled, pour the base into a pre-frozen ice cream maker according to the manufacturer's instructions. Churn until it reaches a soft-serve consistency (typically 20–30 minutes depending on machine). During the last 2–5 minutes of churning, add any optional mix-ins (chocolate, nuts, fruit pieces) so they distribute evenly.

    Harden

    Transfer churned ice cream to an airtight container. Press a piece of waxed paper directly onto the surface and seal with a lid. Freeze for at least 2–4 hours to firm before serving.

Sorbet — fruit option

    Prepare fruit puree

    If using whole fruit, hull/peel and roughly chop. Puree fruit in a blender or food processor until smooth. Strain through a fine-mesh sieve if you want a silky texture, especially for berries or mango.

    Make sorbet base

    Combine 1 cup simple syrup (see note) with 3 cups fruit puree, 2 tbs lemon juice and a pinch of salt. Taste and adjust sweetness or acidity — the mixture should taste slightly sweeter than you want the finished sorbet because freezing dulls flavors.

    Chill the mixture

    Chill the fruit mixture thoroughly in the refrigerator, at least 1–2 hours, until very cold.

    Churn the sorbet

    Pour the chilled fruit base into the ice cream maker and churn according to manufacturer instructions until it is thick and icy but scoopable (15–25 minutes). Add optional liqueur or small fruit inclusions in the last minutes of churning.

    Harden and serve

    Transfer sorbet to an airtight container, press plastic wrap onto the surface to prevent ice crystals, and freeze for at least 1–2 hours to firm. Serve straight from the freezer, letting sit 3–5 minutes to soften if very hard.

Flavoring, inclusions & finishing

    Infuse herbs or citrus: For herb- or citrus-flavored ice cream, bruise herbs lightly and steep them in the warm milk mixture for 10–15 minutes, or add citrus zest during heating. Strain them out before chilling. For delicate flavors, add a small amount of liqueur (1 tbs) during churning to help maintain scoopability.

    Add mix-ins: Fold in chopped chocolate, nuts, or fruit pieces during the last 2–5 minutes of churning or gently stir them into churned ice cream before transfer to the container to avoid over-beating and to keep pieces intact.

    Presentation: For a chef's seasonal selection, prepare two or three small portions with contrasting flavors (e.g., creamy vanilla custard, bright berry sorbet, and an herb-infused lemon). Serve in chilled bowls or wafer cones and garnish with a sprig of fresh herb, a drizzle of reduction, or a sprinkle of toasted nuts.

    Notes on simple syrup: To make simple syrup, combine equal parts granulated sugar and water (by weight or volume), bring to a simmer until sugar dissolves, cool before using. For a lighter syrup, use 3/4 cup sugar to 1 cup water.
