    Mix dry ingredients

    In a medium bowl whisk together the all-purpose flour, granulated sugar and fine sea salt until evenly combined.

    Combine wet ingredients

    In a separate bowl whisk the eggs lightly, then whisk in the milk, vanilla extract and melted butter until smooth.

    Slowly pour the wet mixture into the dry ingredients while whisking until a smooth, thin batter forms. The batter should be thinner than pancake batter — similar to heavy cream. If lumps remain, strain through a fine-mesh sieve. Let the batter rest 15 minutes at room temperature (this hydrates the flour and produces a tender texture).

    Prepare pears

    While the batter rests, heat 1 tablespoon unsalted butter in a medium nonstick skillet over medium heat. Add the sliced pears, sprinkle with the brown sugar and lemon juice, and cook, stirring occasionally, until the slices are just softened and starting to color, 4–6 minutes. Remove from heat and let cool slightly.

    Make mascarpone cream

    In a small bowl combine the mascarpone, confectioners' sugar and cold heavy cream. Whisk briskly until smooth and slightly fluffy — enough to be spreadable but not fully whipped. Chill until ready to use.

    Cook Far Niente dolce (crepe-pan assembly)

    Heat a 10–11 inch nonstick skillet or crepe pan over medium-low heat and brush lightly with melted butter. Pour 1/3 cup of batter into the center and immediately tilt and swirl the pan so the batter makes a thin, even round about 8–9 inches in diameter. Cook until the top surface is mostly set and the edges lift easily, about 1–1.5 minutes. Flip with a thin spatula and cook the second side 30–45 seconds until pale golden. Transfer to a plate and keep warm under a clean towel. Repeat with remaining batter, stacking crepes separated by parchment if desired (yields about 8 crepes).

    Assemble: lay one crepe on a serving plate. Spread about 1 tablespoon mascarpone cream across the center, top with 3–4 slices of sautéed pear, sprinkle a pinch of toasted sliced almonds and a tiny pinch of flaky sea salt. Fold or roll the crepe as preferred (half-moon or rolled). Repeat for each serving.

    Dust each assembled crepe lightly with powdered sugar, add an optional drizzle of honey or aged balsamic (about 1 teaspoon), and garnish with fresh mint leaves and any remaining toasted almonds.

    Serve immediately while warm. If preparing ahead, keep crepes unfilled covered with plastic wrap in the refrigerator up to 24 hours; rewarm gently in a skillet before assembling so the mascarpone stays creamy.
