Prepare and Butter-Poach Lobster Meat
If using pre-cooked lobster tail or claw meat, pat dry and cut into bite-sized pieces. In a small skillet over low heat, melt 4 tbsp unsalted butter until foaming but not browning. Add lobster meat, gently submerge, and warm for 1–2 minutes until just heated through. Remove lobster with a slotted spoon into a bowl, squeeze 1 tsp lemon juice over it, season with 1 tsp sea salt and 1/2 tsp black pepper, and fold in 1 tbsp snipped chives. Keep warm.

Toast Shells and Build Flavor
In a medium saucepan over medium heat, warm 1 tbsp olive oil and 3 tbsp unsalted butter. Add 2 cups lobster or shrimp shells and cook, stirring occasionally, until shells turn fragrant and slightly browned, about 5–6 minutes. Add diced carrot (1/2 cup), celery (1/2 cup), and onion (3/4 cup). Cook until vegetables soften and begin to brown, about 6–8 minutes. Add 2 minced garlic cloves and 1 tbsp tomato paste; cook 1–2 minutes, stirring, until the paste darkens slightly.

Deglaze and Simmer
Pour in 1/2 cup dry sherry or white wine to deglaze the pan, scraping up browned bits. Let alcohol reduce by half, about 2–3 minutes. Sprinkle 1.5 tbsp all-purpose flour over the mixture and stir to coat vegetables and shells; cook 1 minute to remove raw flour taste. Slowly add 3 cups fish stock (or low-sodium chicken stock), whisking to incorporate. Add 1 bay leaf, 1 sprig thyme, 1/2 tsp paprika, and 1/8 tsp cayenne. Bring to a gentle simmer, then reduce heat and simmer uncovered for 20–25 minutes to concentrate flavors.

Strain and Purée
Remove from heat. Discard bay leaf and thyme sprig. Using a fine-mesh sieve, strain the solids into a clean saucepan, pressing on solids with a spoon to extract liquid and flavor; discard shells and solids. For extra smoothness, transfer strained liquid and a portion of the solids (if desired) to a blender and purée until velvety, then pass through a fine sieve again into the saucepan.

Finish the Bisque
Return the strained puréed stock to low heat. Stir in 3/4 cup heavy cream and 1/4 cup whole milk. Warm gently—do not boil—until heated through and slightly thickened, about 4–6 minutes. Taste and adjust seasoning with additional salt or pepper as needed. If you want a richer mouthfeel, whisk in 1–2 tbsp additional cold unsalted butter off heat.
Assembly and Garnish

Ladle about 1 cup of hot bisque into warmed cups or bowls. Divide the butter-poached lobster meat among servings (about 1/4 cup per serving if making 4 servings). Spoon the lobster into the center of each cup. Garnish with remaining snipped chives, a few microgreens or parsley leaves, and optional croutons. Finish with a light drizzle (1 tsp) of truffle oil or melted butter if desired. Serve immediately.
