Cooking the Gnocchi
1. Cook the Gnocchi
In a large pot of boiling salted water, cook the gnocchi according to package instructions until they float to the surface. Drain and set aside.
Preparing the Grouper
2. Sear the Grouper
Season the grouper fillets with salt and pepper. In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the grouper fillets and cook for about 4-5 minutes on each side, or until cooked through and golden brown. Remove from skillet and keep warm.
Making the Sauce
3. Prepare the Lemon Jus
In the same skillet, add the remaining tablespoon of olive oil and sauté the spring peas for about 2-3 minutes. Stir in the lobster meat and cook until heated through. Add the lemon juice and stir to combine.
Bringing it All Together
4. Combine and Serve
Toss the cooked gnocchi with the lobster and pea mixture. Place the gnocchi on plates, top with the grouper fillets, and garnish with fresh parsley. Serve immediately.
