Shrimp
Prepare poaching liquid
In a large pot, combine 6 cups water, 1 tablespoon kosher salt, 1 teaspoon whole black peppercorns, and 1 bay leaf. Halve the lemon and squeeze juice into the pot then drop both halves in. Bring to a gentle simmer over medium heat. Do not boil vigorously—aim for 180–190°F (gentle simmer).
Shock bowl
While the poaching liquid heats, fill a large bowl with 4 cups ice and cold water to create an ice bath.
Poach shrimp
Once the poaching liquid reaches a gentle simmer, add the colossal shrimp in a single layer. Stir gently to separate. Cook until shrimp are opaque and just curled, about 2–3 minutes depending on size (16/20 typically 2–3 minutes).
Shock shrimp
Using a slotted spoon or spider, immediately transfer the shrimp to the ice bath to stop cooking. Let sit 2–3 minutes until fully chilled.
Dry and chill
Drain the shrimp on paper towels, pat dry, then transfer to a serving platter or bowl. Keep refrigerated until serving. Reserve some lemon halves for garnish and squeezing.
House-made Cocktail Sauce (Atomic Horseradish)
Combine base
In a medium bowl, combine 3 tablespoons ketchup, 1 teaspoon Dijon or smooth yellow mustard, and 1 teaspoon Worcestershire sauce. Stir until smooth.
Add horseradish and heat
Add 2 teaspoons very hot prepared horseradish and 1 teaspoon milder prepared horseradish to control heat level. Mix thoroughly and taste carefully (horseradish heat can intensify). Add 2 dashes hot sauce and 1 teaspoon fresh lemon juice to brighten flavors.
Season and finish
Stir in 1 teaspoon smoked paprika, 1/4 teaspoon kosher salt, and 1/4 teaspoon freshly ground black pepper. Adjust seasoning: add more horseradish for heat (in 1/4–1/2 tsp increments), more lemon for brightness, or more ketchup for sweetness/balance. Chill the sauce at least 10 minutes to let flavors meld; cover if making ahead (can be made up to 24 hours ahead).
Garnishes & Serving
Prepare serving vessel by filling a large shallow bowl with crushed ice or rock salt to support a smaller bowl of sauce. Place the chilled cocktail sauce in a small bowl in the center.
Arrange the chilled colossal shrimp around the sauce bowl, tails-out for easy picking. Sprinkle 1 tablespoon finely chopped fresh parsley over shrimp and place lemon wedges around the plate.
Serve immediately with cocktail forks or picks. Encourage guests to squeeze lemon over shrimp and dip into the atomic horseradish cocktail sauce. Leftover shrimp will keep refrigerated up to 24 hours; sauce keeps up to 3 days refrigerated in an airtight container.
