Prep
Rim the glass
Rub the lime wedge around the rim of an old-fashioned glass. Dip the rim into the coarse or smoked sea salt so it adheres. Set the glass aside.
If using egg white, separate and keep the white ready. Chill the serving glass if desired.
Mixing
Dry shake (if using egg white)
Add mezcal, fresh lime juice, agave syrup, orange liqueur, grapefruit juice (if using) and egg white to a cocktail shaker. Secure the lid and dry-shake vigorously for 10–15 seconds (no ice) to create a frothy emulsion.
Wet shake
Open the shaker, add a generous handful of ice (or enough to fill about 2/3 of the shaker). Secure lid and shake hard for 12–15 seconds until the shaker is very cold to the touch and well-chilled.
Strain the cocktail through a fine mesh strainer into the prepared old-fashioned glass over a large ice cube (or several regular ice cubes). This removes small ice chips and makes the drink smoother.
Finish & Garnish
Add 2 dashes of Angostura or grapefruit bitters on top of the foam (if egg white used) and use a toothpick to create a simple pattern if desired.
Float the thin grapefruit or lime wheel on top or rest on the rim as a garnish. Serve immediately.
