Prepare the Beef Roast
Preheat your oven to 350°F (175°C). Rub the beef roast with olive oil, then season it generously with salt, black pepper, garlic powder, and onion powder on all sides.
Roast the Beef
Place the seasoned beef roast in a roasting pan and insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Adjust the time based on your desired doneness.
Rest the Meat
Once done, remove the roast from the oven and cover it loosely with aluminum foil. Let it rest for at least 15-20 minutes before slicing. This allows the juices to redistribute.
Make the Gravy
While the meat rests, prepare the gravy. In a saucepan, bring the beef broth to a simmer. In a small bowl, mix cornstarch with water to create a slurry, then add it to the simmering broth. Stir continuously until the gravy thickens, about 5-7 minutes. Season with salt and pepper to taste.
Serve
Slice the roast beef thinly against the grain and serve with the homemade brown gravy poured over the top.
