Preparation of Chicken
Cook the Chicken
Season the boneless, skinless chicken breasts with Italian seasoning, salt, and pepper. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Once hot, add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and no longer pink in the center. Remove from heat and let it rest for a few minutes before slicing into bite-sized pieces.
Flatbread Assembly
Prepare the Flatbreads
Preheat your oven to 400°F (200°C). Brush each piece of flatbread with the remaining tablespoon of olive oil. Place the flatbreads on a baking sheet.
Spread the Sauce
Spread 1/2 cup of sweet tomato sauce evenly on each flatbread, leaving a small border around the edges.
Topping the Flatbreads
Add Garlic and Chicken
Sprinkle the minced garlic over the sauce on each flatbread. Then, evenly distribute the sliced cooked chicken over the top.
Add Diced Tomatoes and Cheese
Top each flatbread with diced tomatoes and then sprinkle the Italian cheese blend generously over the top.
Baking
Bake the Flatbreads
Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly, and the edges of the flatbread are golden brown.
Finish with Fresh Basil
Remove the flatbreads from the oven and immediately top with fresh basil leaves. Slice and serve warm.
