Prepare the Pork Belly

Preheat your smoker to 225°F (107°C). Score the skin of the pork belly in a crosshatch pattern to help with the rendering of the fat.

Marinate

In a bowl, mix Coca-Cola, brown sugar, soy sauce, minced garlic, black pepper, and salt. Pour this marinade over the pork belly and let it marinate for at least 2 hours, preferably overnight.

Smoke the Pork Belly

Place the marinated pork belly in the smoker and smoke for about 4-5 hours, or until it reaches an internal temperature of 190°F (88°C).

Make the Coca-Cola Glaze

While the pork is smoking, bring the remaining marinade to a boil in a saucepan and reduce it until it thickens, about 10-15 minutes.

Pickle the Shallots

In another bowl, combine sliced shallots with rice vinegar and let them pickle for at least 30 minutes.

Finish the Pork Belly

Once the pork belly is done smoking, brush it with the glaze and return it to the smoker for an additional 30 minutes to set the glaze.

Serve

Slice the smoked pork belly and serve it topped with pickled shallots and toasted peanuts.
