Croissant Bread Pudding

Preparation

Prepare the Croissants

Preheat the oven to 350°F (175°C). Tear the croissants into bite-sized pieces and place them in a greased baking dish.

Mix the Custard

In a mixing bowl, whisk together the milk, heavy cream, eggs, sugar, and vanilla extract until well combined.

Combine and Soak

Pour the custard mixture over the croissant pieces, ensuring they are fully soaked. Let it sit for about 15 minutes.

Prepare the Strawberry-Rhubarb Sauce

In a saucepan over medium heat, melt the butter. Add the strawberries and rhubarb, cooking until soft. Stir in a little sugar if needed and cook until the mixture thickens.

Bake the Pudding

Bake the croissant pudding in the preheated oven for 30-35 minutes, or until golden brown and set in the center.

Serve

Remove from the oven and let it cool slightly. Serve warm with scoops of vanilla bean ice cream on top and drizzle with the warm strawberry-rhubarb sauce.
