Method

Prepare the Semifreddo Base

Whip the Cream

In a large bowl, whip the heavy cream until soft peaks form. Set aside.

Beat Eggs and Sugar

In another bowl, whisk the eggs and sugar until pale and fluffy. Stir in the vanilla extract.

Combine Mixtures

Gently fold the whipped cream into the egg mixture, then fold in the creme fraiche until smooth.

Transfer the mixture to a loaf pan and freeze for at least 6 hours or until firm.

Make Candied Carrot Curls

Using a vegetable peeler, create curls from the carrots.

Candy the Carrots

In a saucepan, combine sugar and water. Bring to a simmer, add carrot curls, and cook until translucent. Remove and let cool.

Prepare Spiced Caramel Sauce

Make Caramel

In a saucepan, heat sugar over medium heat until melted and amber. Stir in butter until melted.

Finish Sauce

Slowly whisk in heavy cream and spices until smooth. Allow to cool slightly.

Prepare Honeyed Pecans

Toast Pecans

In a skillet, toast pecans over medium heat until fragrant.

Add Honey

Drizzle honey over pecans, stir to coat, and season with salt. Allow to cool.

Serve

Scoop the semifreddo onto a plate, drizzle with spiced caramel sauce, and top with candied carrot curls and honeyed pecans before serving.
