    Prepare the Gigante Bean Ragu

    In a large pot, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and crushed red pepper flakes, sautéing until fragrant, about 1 minute.

    Add Beans and Tomato Paste

    Stir in the gigante beans (if using dried, make sure they are soaked and cooked beforehand), tomato paste, and vegetable broth. Bring to a simmer and let it cook for 15-20 minutes until the beans are tender and the mixture thickens slightly.

    Finish the Ragu

    Stir in heavy cream and half of the grated Parmesan cheese. Season with salt and black pepper to taste. Let it simmer for an additional 5 minutes, then remove from heat.

    Cook the Rapini Salsa Rosa

    In a separate pan, heat the remaining 2 tablespoons of olive oil. Add the rapini and sauté for about 5-7 minutes until tender. Season with salt and pepper, then add lemon juice and stir well.

    Cook the Wild Striped Bass

    Season the striped bass fillets with salt and black pepper. In a large skillet over medium-high heat, add a little olive oil and cook the fish for 4-5 minutes on each side until golden brown and cooked through.

    Plate the Dish

    On a plate, serve a generous scoop of gigante bean ragu, top with the sautéed rapini, and place the wild striped bass on top. Garnish with the remaining Parmesan cheese.
