Tartare Preparation

    Prepare the Tuna

    Using a sharp knife, carefully dice the bigeye tuna into small cubes, about ½ inch in size. Place the diced tuna in a mixing bowl.

    Chop the Olives

    Finely chop the black olives and add them to the bowl with the tuna.

    Prepare the Tomatoes

    Cut the cherry tomatoes in half and remove the seeds if desired. Dice the remaining tomato flesh into small pieces and add to the bowl.

    Combine Ingredients

    In the mixing bowl with tuna, olives, and tomatoes, add the extra virgin olive oil, lemon juice, and finely chopped fresh basil.

    Season the Mixture

    Sprinkle the sea salt and black pepper over the mixture. Gently toss all the ingredients together until evenly coated.

    Chill the Tartare

    Cover the bowl with plastic wrap and refrigerate for at least 15 minutes to allow the flavors to meld.

    Serve

    Using a ring mold, portion the tartare onto serving plates. Drizzle with additional olive oil if desired, and garnish with basil leaves.
