Method

Steak Preparation

  1. 1

    Season the Steak

Pat the strip steak dry with paper towels. Season both sides generously with salt and black pepper.

  2. 2

    Heat the Pan

In a large skillet or cast-iron pan, heat the olive oil over medium-high heat until it shimmers.

  3. 3

    Cook the Steak

Add the steak to the hot pan and sear for about 4-5 minutes on each side for medium-rare, or until it reaches your desired doneness.

  4. 4

    Rest the Steak

Remove the steak from the pan and let it rest on a plate for 5-10 minutes before slicing.

Compound Butter Preparation

  1. 5

    Melt the Butter

In a small saucepan over low heat, melt the unsalted butter until it is completely liquid.

  2. 6

    Mix Ingredients

Stir in the minced garlic, chopped parsley, chopped chives, lemon zest, and salt into the melted butter until well combined.

  3. 7

    Form the Butter

Transfer the compound butter mixture onto a piece of parchment paper. Roll it into a log shape and twist the ends to seal. Refrigerate until firm.
