Pasta and Clam Preparation
Method
Cooking Instructions
- 1
Prepare the Clams
In a large bowl, soak the fresh clams in cold water for about 30 minutes to remove sand and grit. Rinse them thoroughly under cold running water and set aside.
- 2
Prepare the Leeks and Garlic
Trim the roots and dark green tops from the leeks. Slice the leeks in half lengthwise, then chop them into thin half-moons. Mince the garlic cloves.
- 3
Cook the Spaghetti
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta cooking water, then drain the spaghetti.
- 4
Sauté the Aromatics
In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and minced garlic, sautéing until soft and fragrant, about 5 minutes.
- 5
Add the Clams and Wine
Add the cleaned clams to the skillet and pour in the white wine. Cover the skillet and cook for about 5-7 minutes, or until the clams have opened. Discard any clams that remain closed.
- 6
Combine Spaghetti and Clams
Add the cooked spaghetti to the skillet with the clams. Toss well to combine, adding reserved pasta water as needed to create a light sauce.
- 7
Finish and Serve
Stir in the lemon zest, lemon juice, and chopped parsley. Season with salt to taste. Serve immediately, garnished with extra parsley if desired.
