Hand-Made Pasta Preparation

Make the Dough
In a large bowl, combine the all-purpose flour and salt. Create a well in the center and add the eggs and olive oil. Using a fork, gradually incorporate the flour into the egg mixture until a dough begins to form.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Wrap in plastic wrap and let rest for 30 minutes.

Roll the Pasta
After resting, divide the dough into four pieces. Roll each piece through a pasta machine or with a rolling pin until thin. Cut into desired shapes (fettuccine, tagliatelle, etc.).

Add Tomatoes and Simmer
Add the canned crushed tomatoes to the saucepan, stirring to combine. Bring to a simmer, then reduce the heat and let it cook for 15-20 minutes. Stir in fresh basil, salt, and black pepper to taste.
Combining and Serving

Cook the Pasta
In a large pot, bring salted water to a boil. Add the freshly made pasta and cook for 2-4 minutes until al dente. Drain, reserving some pasta water.

Combine with Sauce
Add the cooked pasta to the saucepan with the sauce. Toss to combine, adding reserved pasta water as needed to achieve desired consistency.

Serve
Divide the pasta between two plates. Top with grated Parmesan cheese and fresh basil leaves before serving.
