Clean the Fish
Rinse the whole orata under cold water and pat dry with paper towels. Ensure the fish is scaled and gutted.

Marinate the Fish
Place the cleaned orata in a shallow dish and pour the marinade over it. Make sure the fish is coated well. Cover and let it marinate in the fridge for at least 30 minutes.
Oreganata Topping

Make the Oreganata Mixture
In a bowl, combine breadcrumbs, dried oregano, grated Parmesan cheese, and red pepper flakes. Mix well to ensure even distribution of ingredients.

Prepare the Grill
Preheat your wood-fired grill to a medium-high heat (about 400°F or 200°C).

Cook the Fish
Place the marinated orata on the grill. Cook for about 6-8 minutes on each side, depending on the thickness of the fish, until the flesh is opaque and flakes easily.

Add the Oreganata Topping
In the last 2-3 minutes of cooking, generously sprinkle the oreganata mixture over the fish. Close the lid of the grill to allow the topping to crisp up.
