    Prepare the Octopus

    Rinse the octopus under cold water to remove any debris. In a large pot, bring salted water to a boil. Add the octopus and cook for about 45 minutes, or until tender. Once cooked, remove from the pot and let it cool.

    Grill the Octopus

    Once cooled, slice the octopus into manageable pieces. Preheat a grill or grill pan over medium-high heat. Brush the octopus pieces with olive oil and season with salt and black pepper. Grill for about 3-4 minutes on each side, until charred and heated through.

    Prepare the Gremolata

    Finely chop the parsley and garlic. In a bowl, mix the chopped parsley, garlic, lemon zest, and a tablespoon of olive oil. Add salt and pepper to taste.

    Prepare the Radicchio

    Chop the radicchio into thin strips. In a pan, heat the remaining olive oil over medium heat and sauté the radicchio for about 2-3 minutes, just until it begins to wilt. Season with salt and pepper.

    Prepare Hearth Grapes

    Wash the grapes and remove them from their stems. You can choose to roast them lightly in a pan for a few minutes to enhance their sweetness or serve them fresh.

    Assemble the Dish

    On a serving platter, arrange the grilled octopus pieces. Top with sautéed radicchio, dollops of stracciatella cheese, and scatter the hearth grapes around. Finish with a generous drizzle of the gremolata sauce over the top.
