    Prepare the Lamb

    Preheat your oven to 300°F (150°C).

    Season the Lamb

    In a large bowl, combine the olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the lamb shoulder, ensuring it is well coated.

    Sear the Lamb

    In a large oven-safe pot, heat a bit more olive oil over medium-high heat. Once hot, add the lamb shoulder and sear it on all sides until browned, about 4-5 minutes per side.

    Add Broth

    Once seared, remove the lamb shoulder from the pot. Pour in the vegetable broth, scraping up any brown bits from the bottom of the pot. Return the lamb to the pot.

    Roast the Lamb

    Cover the pot with a lid or aluminum foil and place it in the preheated oven. Roast for 4-5 hours, or until the lamb is tender and easily pulls apart with a fork.
