Prepare the Sourdough
Preheat your oven to 375°F (190°C). Slice the sourdough bread into 1/2-inch thick slices.

Toast the Bread
Brush both sides of each slice of sourdough with olive oil. Sprinkle with salt and pepper. Place the slices on a baking sheet in a single layer and toast in the preheated oven for about 10-12 minutes, or until golden and crispy, flipping halfway through.

Prepare the Whipped Ricotta
In a mixing bowl, add the ricotta cheese and a pinch of salt and pepper. Using a hand mixer or a whisk, whip the ricotta until it’s smooth and creamy. Adjust seasoning to taste.

Assemble the Crostini
Spread a generous amount of whipped ricotta on each toasted sourdough slice. Top with a spoonful of winter caponata.

Serve
Arrange the crostini on a serving platter and drizzle with a little extra olive oil if desired. Enjoy!
