Prepare the crust
Preheat the oven to 350°F (175°C). In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.

Form the crust
Press the mixture into the bottom of a 9-inch springform pan evenly. Bake for 8-10 minutes until lightly golden. Remove from the oven and let it cool while preparing the filling.

Make the filling
In a large mixing bowl, beat the softened cream cheese until smooth and creamy.

Add sour cream and sugar
Add the sour cream, granulated sugar, and vanilla extract to the cream cheese. Mix until well combined.

Incorporate eggs
Add the eggs one at a time, mixing on low speed after each addition until just combined. Do not overmix.

Pour filling into crust
Pour the cheesecake filling into the cooled crust, smoothing the top with a spatula.

Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly open for 1 hour.

Cool and chill
Remove the cheesecake from the oven and let it cool to room temperature. Then refrigerate for at least 4 hours or overnight.

Before serving, top the chilled cheesecake with fresh berries. Slice and enjoy!
