Method
Preparing the Salted Cod

Soak the Cod
Rinse the salted cod under cold water to remove excess salt. Place the cod in a bowl and cover it with cold water. Soak for at least 12 hours, changing the water every 4 hours.

Cook the Cod
After soaking, drain the cod and place it in a pot. Cover with fresh water and bring to a boil. Reduce heat and simmer for about 20 minutes, or until the fish is tender. Drain and let it cool slightly.

Flake the Cod
Once cooled, flake the cod into bite-sized pieces, removing any bones or skin.
Making the Aioli

Prepare the Aioli
In a mixing bowl, mash the garlic cloves into a paste. Add the egg yolk and lemon juice, whisking until combined.

Emulsify
Slowly drizzle in the olive oil while whisking continuously until the mixture thickens and becomes creamy. Season with salt and black pepper to taste.
Preparing the Green Tomato Potato Roll

Cook the Potatoes
Peel and dice the potatoes. Boil in salted water until tender, about 15 minutes. Drain and mash until smooth.

Prepare the Green Tomatoes
Finely chop the green tomatoes and mix them into the mashed potatoes. Stir in chopped fresh parsley for added flavor.

Form the Rolls
Take a spoonful of the potato mixture and form it into small rolls. Place them on a baking sheet.

Fry the Rolls
Heat oil in a frying pan over medium heat. Fry the potato rolls until golden brown on all sides, about 3-4 minutes per side.
Assembly

Plate the Dish
On a serving plate, place a generous amount of the flaked salted cod. Arrange the fried green tomato potato rolls around the cod.

Serve with Aioli
Drizzle the aioli over the cod and serve the remaining aioli on the side for dipping.
