Soak mushrooms & prepare kombu
Place dried shiitake mushrooms in 1 cup hot water and soak for 20 minutes until softened. If using kombu, wipe lightly and set aside.
Build the broth
In a large pot over medium heat, add the vegetable broth and the soaking liquid from the shiitake (leave any gritty sediment behind). Add the sliced fresh ginger, smashed garlic cloves, softened shiitake (optional to keep some in broth), and kombu. Bring to a gentle simmer.
Infuse flavors
Simmer the broth gently for 12 minutes, then remove the kombu to avoid sliminess. Stir in miso paste in a small bowl with 1/4 cup hot broth to dissolve, then return miso mixture to pot. Add soy sauce, sesame oil, chili garlic sauce, and Szechuan chili oil (if using). Taste and adjust heat/salt; simmer another 3 minutes. Keep broth hot on low while preparing other components.

Prepare tofu
Press tofu for at least 10 minutes to drain excess water. Pat dry, then cut into 1/2-inch cubes. Toss the cubes with cornstarch, 1 tbsp soy sauce, toasted sesame oil, salt, and pepper until evenly coated.
Pan-fry tofu
Heat 1 tbsp neutral oil in a nonstick or cast-iron skillet over medium-high heat. Add tofu cubes in a single layer and cook without moving for 3-4 minutes until golden on one side. Flip and brown remaining sides for another 3-5 minutes until crisp. Remove and set aside on a paper towel-lined plate.

Blanch vegetables
In the noodle-cooking pot (after draining), bring a small amount of water to a boil and blanch baby bok choy for 1-2 minutes until bright green and tender-crisp. Remove and set aside. Quickly blanch sliced shiitake if you prefer them softened, for about 30 seconds.
Assemble bowls
Ladle hot broth over noodles in each bowl (about 2 cups broth per serving). Arrange tofu, blanched bok choy, sliced fresh shiitake, corn, bean sprouts, and egg halves on top. Sprinkle sliced green onions, sesame seeds, cilantro, and nori strips. Serve with lime wedges and extra chili garlic sauce or chili oil on the side.
